Expert vegan baking tips:

Remember that coconut oil has a tolerance for high temps. It’s a great substitute for other fats like shortening and butter, as well as a great pan prep because it sits solid at room temp.

You can melt solid coconut oil in a glass measuring cup in 10 second bursts in the microwave.

Be sure to use a fine crystal sugar for the cookie rather than raw sugar or turbinado for the best texture in the cookies. Coarse sugars tend not to dissolve as easily in the dough and your cookies won’t come out the way you want them to.

A note about vegan chocolate – While cocoa beans are inherently vegan since they come from a plant, they do go through a process into commercial chocolate and other ingredients can be added that are not vegan. Always try to look for high quality chocolate that is produced with only cocoa butter and sugar. If lecithin and vanilla are added both are okay.

There are also milk chocolates made with non-dairy substitutes like almond or rice milk that you can use.

To be a real vegan true to form always read the labels to make sure that each recipe ingredient is 100% vegan. Products and ingredient sources can change so it should say so on the label.

I hope you enjoyed this vegan cookie recipe round up as much as I did!
